Managing 10 to 20 woks of assorted sizes is chicken feat in the deft hands of owner Ah Lim. Even when the heat from the fire seems unbearable, the owner insists on cooking personally , without leaving the tough job to others. The chicken pieces are added with soy sauce, sugar, pepper and various other seasonings, then refrigerated and left to marinate for 2 to 3 hours.
